The mussel soup ingredients are 1 kg of mussels, 1 L of water, 1 T of Cheongju, and 1 bunch of green onions.
To make it, first, rub the mussel shells together to remove any foreign substances. Hold the mussels with one hand and pull the mussel’s byssus with the other hand to remove it, then wash them cleanly.
Put water, mussels, Cheongju, and green onions in a pot and boil on high heat for 10 minutes to complete. When boiling, if you skim off the white foam that forms due to the salt in the mussels, you can make a cleaner broth. If you boil mussel soup for too long, it will become tough, so do not boil it for more than 10 minutes. The ingredients for spicy mussel soup noodles are 1 kg of mussels, 1 L of water, 1 T of rice wine, 1 bunch of green onions, 3 T of cooking oil, 1 T of minced garlic, 1 t of minced ginger, 1/2 bunch of green onions, 1 T of regular red pepper powder, 1 bag of ramen, and 3 stalks of water parsley.
To make it, first, take out the mussels from the mussel broth separately. Boiled mussels become tough if boiled for too long, so put them in at the end of cooking, so keep them. Cut the green onions into thin strips and cut the water parsley into 5 cm long pieces.
Put 3 T of cooking oil in a pot and stir-fry the minced garlic and green onions over high heat to make green onion garlic oil. Add 1 T of regular red pepper powder and 1 t of minced ginger to the oil and stir-fry over low heat.
Add 600 ml of mussel broth, ramen soup, and ramen flakes and boil over high heat. When the broth boils, add ramen, water parsley, and boiled mussels and boil briefly to complete. Lift the noodles and expose them to the cold air to make them more chewy.
The potato tortilla ingredients are 1 tortilla (20cm in diameter), 1/2 boiled potato, 4-5 spinach stalks, 4 cherry tomatoes, 60g pizza cheese (1 bag), 2T mayonnaise, 1/2T minced garlic, and 2T Greek yogurt.
Here’s how to make it: First, cut the cherry tomatoes in half. Spread 2T mayonnaise, 1/2T minced garlic, and 2T Greek yogurt on the tortilla. Cut the boiled potatoes into fingernail-sized pieces and place them evenly on the tortilla.
Place the tortilla in the pan, top with the cherry tomatoes, and sprinkle with pizza cheese. Close the lid and cook on low heat for 5 minutes and 30 seconds. Bake over low heat until the pizza cheese melts.
Turn off the heat, open the lid, place spinach on top of the melted cheese, and cook slightly with the residual heat. Finally, fold the potato tortilla in half to complete.
